How to pickle Cucumber's. ๐ฅ๐ฅ๐ฅ๐ฅ๐ฅ
As I have so many cucumbers I have had to come up with ways to Preserve them.
I bought a fermenting set and a canning set for long storage and I also made some delicious, easy, quick pickled cucumbers in the fridge for eating and lasting a few weeks in your fridge.
I like Dhill pickles and Kosher Dhill pickles. The first couple of tries I made it too salty which was okay as I emptied half of the fermented salty brine and added fresh water and popped them into the fridge for fridge pickles.
The second time around I made them it was a lot easier as I knew what to do and not to do regarding canning and fermenting.
I have made some more Dhill pickles fermented, canned and one for easy fridge pickles and am addicted to them. ๐ฅ๐ฅ๐ฅ๐ฅ๐
Step one: wash your cucumbers.
Wash bottled water as chlorine in tap water stop's the Fermentation process.y
Wash and rinse your exquipment for fermenting or/and canning.
Boil a large pan of water to submerge the jars in with two inches on the top for the water to cover the jars while they are processing.
In another pan boil some water and sterilise jar lids and cap's or tops.
Make up your receipt for canning and then take the jars out using tongs and place on top of a clean folded up tea towel so the glass doesn't come in to contact with a cold hard surface where a hot jar would crack so please put them on a tea towel.
Fill jars using a funnel to about an inch or two from the top.
Clean around the top of the jars with paper towels incase liquid has gone on them making a bad seal.
Take jar lids, tops and ring's, put on jars and twist the loosely but not too loosely. Seal but don't seal tightly.
Place each jar in the big pot of boiling water that you used to sterilise them and put a tea towel in the bottom so that the glass doesn't crack on the hard bottom while boiling - Processing.
After processing is done take the jars out of the pot of boiling water and put them onto the clean, dry tea towel.
Wait a while and you will hear each one Pop.
Once a jar has popped it means it's sealed. You can check your seals once popped, fully cooled down and the next day to do this.
If the seal look's indented downwards and you are able to pick it up then it's good to be tightened up and store. If there don't it usually means that food particles or a chipped glass or a seal that needs replacing.
If fermenting you don't have to sterilise the containers just make sure that you wash your jars and lids thoroughly with hot soapy water and rinse them properly.
If you sterilise the containers your food won't ferment.
Fermenting in another post.
